So, on my volume pot (ACME's 250k from a Lollar pre-wire) in my strat, I get a considerable volume jump between 8-10; it stays quiet between 1 and 7 then goes way up at 8; volume swells don't seem to work too well. Do I need to get a new pot or is there something I can do about it?

Sounds like you might need a volume bleed cap installed... if you can solder take a .001uf disk capacitor and wire it between the middle lug (2) and the outer lug that isn't grounded. that should allow more higher frequencies to pass through and allow the whole volume pot to be used

There is also a difference between commonly used pots. A (audio) pots will bunch most of the taper at the end. B pots will have a more gradual taper, being a lot more controlled through their sweep.
