On a tangential note, other than natural masked binding (which isn't really binding, at all), has anyone ever gotten away with painting binding a different color? Say you found a body that is otherwise perfect in the Screamin' Deals section, but it has pearloid binding and you wanted black. With proper masking, sanding, painting, and clear coating, is this ever done? Can't say I've ever read about it (but that doesn't mean anything).

I've never seen/heard of it being done, but I imagine it's possible. Except in rare cases on high-end acoustics, most binding is made of ABS plastic, and it takes a finish readily. It has to, or you couldn't clearcoat. The tough part would be masking and then levelling after the fact to get a uniform surface. Past that, I guess I'd be concerned about damage later on. If you put something dark over something light, the fact that you'd have a relatively sharp edge would mean that chipping it would be pretty easy, and the damage would be quite obvious.
