If this guy still hasn't provided pictures of any actual work..  I'm falling into the same camp with some of the others, and saying this guy is just stringing you along.  At this point, as the person that commissioned the work, I'd be getting pretty pissy about right now that I haven't seen one iota of progress.

One thing is for sure, you're a more patient person that I am.. and I salute you for it.  ccasion14:

I'm starting to get a bit apprehensive... some of those gaps are not 'slight'. I hope it isn't going to turn into a slab of polyester resin with some wood sticking out here and there.

IF that is epoxy you will be fine.  A few passed on a belt sander or planer and it will look great

I will post pics as they come available. Doug's shop is very slow now with all concerts being canceled.  So he is still working on my build but those smaller orders that bring in cash flow are his priorities.
