What are some problems I might have if put an arched top and back on an acoustic guitar kit? I can't find any serviced archtop kits I like, and doubt that I have the skills to scratch build.

Solid archtops are tricky , and subject to cracking  ( I have a 50's vintage one that has) .  If you are really interested in building one , get Bob Benedetto's book..he is the Man

Yes.  Those.  The T-O-M feature seems a nice upgrade, but the rosewood parts floats on the body.
