Dumb question, the long shaft pots I have are too long. I'm assuming I can just use a washer, lock washer and nut on the inside of the cavity to space the shaft properly?

Yes, I've had to experiment with washers on the long shafts until they sit at the height I want. I bought enough that I should never run out in at least three lifetimes. I'm not sure where you are located, but in the US McMaster-Carr is a great place to buy general hardware. They have an awesome selection.

I also find that using the star washers inside after the nut and washer to adjust the height helps to keep the pots from turning when tightening down. Lot's of assortments on Amazon:

Quick question, will i need to route the switch wire around the edge of the neck pickup cavity better or will it fit under the humbucker?

I wired the switch and pots up lat night without thinking it through. My humbucker rings from warmoth are scheduled to be delivered today.

What a BEAST! I just finished up and few hours ago and its amazing. I am kind of dialing it in and setting up as i go and still have some fine tuning but I am loving it so far. im pretty sure i made a mistake wiring it up because the neck pickup has zero sustain and is much lower volume wise but ill figure that out in the near future. No way im showing a pic of my wiring job. lol. it was my first attempt and its ugly. :) Neck feels and plays really fast.. I am really digging it.

I've tried but the are too large to post. The only way I've been able to so far is with the imagr site. I would love to post them. Any suggestions on how? The guitar turned out incredible
 
Finished product is beautiful and plays incredibly. Need to figure out what I have going on with neck pickup (low volume and very little sustain) probably a bad solder connection and fine tune the set up. I can already tell this will be one of my favorites.
