Does it make sense to install new bridge before getting replacement neck?

Is there any particular disadvantage to installing the new bridge with the current stock neck on the git, and later adjusting its radius and saddle height when the replacement neck is put on?

Depends on whether the bridge has fixed radius or not. A fixed radius bridge can be a limitation. Otherwise if the saddles are individually adjustable, it's not a big issue to make the necessary changes when the neck is replaced.
 
I don't see why there would be any negative outcomes from that, realistically. Even if you don't replace the bridge, once you get a replacement neck on it, you'd have to adjust the bridge anyway, whether current or replacement. Not just in saddle heights, but checking intonation even if the spec sheet says the scale length is the same on paper.
