I always find myself agreeing with Cagey, but for the sake of a simple answer that you're looking for, in my opinion I'd say go with the wenge. The open grain seems a tad warmer toward the mahog tone you want. Both of my rosewood necks are noticeably brighter when I've A/B'ed them with my wenge...

6-8 coats of Tru oil will do the trick for what you want. Here's a mahogany body with 8 coats, and it's a bit glossier than the pics show. But Swarfrat is correct, the more time and effort you put in, the glossier it will get. I'm too lazy for that though, when if i want glossy, I just spray em'...
