I think it probably comes down to demand and costs. I don't think many people would typically be in the market for a "vintage" Fender neck with a Gibson scale length.

You obviously choose the construction type first and "Gibson® Scale Conversion" is a modern construction variant, as @Scab Pickens already pointed out.
So, if you choose Gibson® Scale Conversion, as a modern construction it doesn't have a skunk stripe, and the options for fretboard wood do not allow "one-piece", because it's not possible.
