Testing picups without installing them

I have a set of "new in box" Fender Vintage Noiseless pickups on their way to me via eBay.  The seller has a 5 day return policy from the scheduled delivery date.  Unfortunately, the guitar the pickups will be going in will not be ready for assembly for a couple of weeks, so I cant install them within the return window.  I read on here somewhere that i should be able to check the pickups resistance with a multi-meter, and if they test out to spec, they should be good.  Is that the case?  Is there anything else I can do to verify they are in good shape? 
Measure the impedance...

If you want to hear them, you can hook them up to a cable with some alligator clips (one lead to the tip, one lead to the ring), strum another guitar, and hold the pickup close to the strings.
