That's a beautiful guitar! One of my favorite body styles, and you've dressed it well!
The Fishman is a good choice for amplifier, as it's more of a full-range amp than is typical for electric guitar. You'll need that as you'll probably end up with some sort of acoustic or general purpose modeler at some point to get authentic acoustic sounds out of that VIP. I put piezos on a Jazzmaster last year (Graphtech's "Ghost" system) and was surprised at how little it sounds like an acoustic. The guitar itself is just such a radically different beast from an acoustic that even though you're picking up vibrations from the entire instrument instead of just string motion, there's not much resemblance to any acoustic you've ever heard. Solid (or chambered or semi-hollow) bodies just don't vibrate anywhere near as much or the same way as acoustic bodies do, so you get something that sounds more like anemic single coils with some strange EQ curve on them.
But, that strange curve produces audible characteristics that are different than what magnetic or acoustic pickups sense, so a little further processing can return some fantastic results. Even running through a cheap stompbox acoustic modeler (just a
Behringer AM400 or
Boss AC-3, for example) is a dramatic improvement (
video review), and if you go crazy and run it through a real modeler or profiler like an Axe Fx or a Kemper, it's spooky close to the real thing. But, you need a full-range amp to pull it off, and that Fishman should fit the bill nicely.
Note that the video review of stompbox acoustic modelers I linked above is being fed by an electric with magnetic pickups rather than piezos. The piezo feed works better. Also, the Behringer version is no longer available new. I suspect the obvious dead-nuts copying of the Boss unit got them sued into pulling it from the market. But, used AM400s should be pretty cheap used as they didn't cost jack new and the Boss is only a little over a $100 anyway. Another modeler you might want to listen to is the
Mooer Acoustikar. Nice little piece, also inexpensive, but also demo'd using a mag feed vs. piezo. I suspect the piezo feed would be even better. Also, there are a number of acoustic preamp pedals out there for substantially more money ($300-$400 range), but they're designed to be fed by acoustics, so I'm not sure they'd work as well or any better than the stompbox modelers as the price might imply. I think they're for those who have regular guitar amps that don't offer is what you'll get in the front end of that Fishman Loudbox.
