I'm going to use a Hipshot or Gotoh or some other surface-mount string-through bridge on a Jaguar - does it need an angled neck pocket?

Don't take this as gospel, but you almost certainly won't need an angled neck pocket. Those are for tall bridges such as Floyds, or some carved top bodies. On a flat top guitar with a short bridge, a parallel pocket works. But, before I laid my money down at Warmoth, I'd call them and ask. They know better than anybody, or can at least find out if you tell them which bridge you're using.

The TOM / Stopbar option automatically has the angled pocket.  However, I am not sure if the Jazzmaster / Jaguar bridge does as well.  It looks about the same from a functional perspective, but you'd probably best clarify it with the guys at Warmoth.

The Jazuar bridge sure looks like awfuly like a TOM on post type design and would require an angled neck pocket. You can always get a recessed TOM if you want a string through with no neck angle.
