Tele contours - torn on what to do

I'd suggest considering the carve-top Tele,

That will be my next build, I want a traditional tele this time.  I want to do a Koa carve top tele next but trying to line that up for my Christmas gift from the wife if you get me. 
 
Also, to save space on creating another thread. Is the Gotoh bridge the bridge of choice in these parts?

I like it - works well for me.

Gotoh stuff in general works very well.
 
Gotoh's a very consistent high-quality parts maker.  Whether the six-saddle modern bridge without the ashtray edges is for you is a matter of taste.  Some folks think a Tele is only a Tele if it has an ashtray bridge with three brass or threaded steel saddles, but I prefer being able to adjust intonation on each string individually, as opposed to balancing the degree of out-of-tune-ness between two strings on a single shared saddle. YMMV.  I prefer the Gotoh to other bridges also because it's clean - no logos, no obtrusive gimcrackery.
 
I only have 1 Tele, and it is contoured. I find it very comfortable to play, but I'm only talking from limited experience with Telecasters in general. In the end, I'd definitely follow stratamania's advice:

Don't.  You'll be fine.  It's a very handsome and useful part.
