Refinishing question

I have a question, I have read through the past posts and to be honest it has all run toghter.

I recently picked up a extreamly nice 1 piece Swamp Ash tele body.  It was already finished, dyed red with Nitro lacquer.  I am wanting to strip the nitro, do a grain fill and re-apply nitro. 

I am wanting to use this a learning exp for finishing.  Any help here would be great.  As I said, I have reviewed the DIY finishing and it has all run together.

You're going to sand through the dye; just go ahead and strip it all the way down, matching a red dye for the sand throughs is somewhere you don't want to go....
