I have examples of both using the same construction ("Warmoth Pro" Strat necks) and geometry ("Standard Thin" compound radius w/ 1 11/16" nut and SS6100 frets), and the Pau Ferro has a noticeably better feel (at least to me). The grain is finer and the wood is denser, so it feels like satin. That's not to disparage the Canary at all; it feels great. I'd use it again. But, there are a number of neck woods I haven't used yet, so I'm trying not to double up on anything. I'll just say that when the day comes that I start doubling or even tripling up on things, Pau Ferro will be among the first woods I get another example of.
As for sound, I can't say. Body and neck wood differences are subtle compared to pickup differences, and in the case of these two necks they're on dramatically different bodies (Hollow carved-top maple over swamp ash hardtail Tele vs. solid swamp ash vibrato Strat) and use wildly different pickups. There's just no way to single out neck influence on the sound.
