If I made a wood(maple) humbucker to telecaster bridge pickup conversion ring and put copper shielding tape on top or back of the wood conversion ring would that conversion ring have similar magnetic field changing properties as the telecaster bridge?

No. Copper is non-ferrous, and tape would be too thin.

Or you can get a quiet pickup from bill lawrences wife, dimarzio or some other company.

I'm not sure, but I suspect he's looking to get the effect on the response of the pickup all that surrounding metal produces, rather than trying to quiet it down, which that bit of hardware doesn't really do.
