I started out working in a guitar shop here in Japan. It wasn't actually working as much as taking care of things for the owner when he was busy. I'd run errands, get things for customers, make deliveries etc... I used to watch him working on guitars all the time. One day he was a little busy and there was a customers guitar that needed a pickup switched out. He looked over at me and said "You think you can do this?" I said "Well, I've never done it before but I've watched you do it a billion times, so yeah, I think I can." and he let me go at it. What I ended up doing for the wiring is I took a guitar off the wall, removed the back plate and just put the wires where that one had them. Soldering didn't really come as that much of a challenge. I got the hang of it really really quick. It was just where to put the wires on the switch and pots etc... I finished it up, called him over, he checked it out and gave me a green light to get it back to the customer. After that he pretty much let me do a lot more work as it came in.
I agree with whoever said to get a book on guitar repair and grab an old beater and give it a tune up. If it's something you don't really care about screwing up you really can't go too wrong.
As for the Warmoth project, people here will be helpful and answer your questions. I agree with whoever said be extremely careful on the tuning peg screws. You may want to practice on that one a bit before you jump feet first into it. As for the depth to drill, I put a piece of tape around my drill bit to the depth I want to go to then I just drill until I reach the tape.
