I dropped a pickup baseplate while looking at it and it hit a couple frets on my neck. It chipped the gray finish off and exposed the shiny part underneath. They’re stainless steel, which I’ve never had before, so is the gray stuff even supposed to be there? You can feel the chips when touching them, so could it be a problem when playing?

Then the stuff that chipped off is most likely just the finish. You'll want to scrape it all off and polish the frets before stringing it up.
Yeah, just did some digging on Warmoth’s virtual builder. It says:
” On finished necks with Maple fretboards, the finish is sprayed directly over the frets. This finish will wear off quickly with use, or it can be scraped off quite easily. A fret leveling operation will also take it off.”
That answers my question. Thanks anyway lol
