Building a 7 string with just one bridge humbucker and a volume knob

This is my first build, and I was wondering what I will need. Will I just need one potentiometer and then the wires? And what type and how many wires. Thanks a lot.
 
Yep, just the pot and wires.

You'll wire the hot from the humbucker to one of the outer (fixed) legs of the pot, and ground the other outer leg.  The ground from the humbucker goes...well...to ground, as does the bare ground wire.  Then you'll need a wire from the output jack sleeve to ground, and a wire from the jack tip to the middle leg of the volume pot.

22AWG stranded should be fine for the wires, sometimes referred to as "hookup wire".  Others may have specific wire recommendations - ignore them at your own risk.  (Seriously - a lot of these folks have done and/or seen anything you'd ever want to do)

Edit: one thing I will say is that grounding to the back of the pot is common, but it's not exactly best practice.  Excessive heat - like the type a soldering iron can apply - can damage your pot internals.
