Impatience is often the death of many finishes.
People cry about how long it takes to get necks/bodies from Warmoth when they order a finish on them, but even using catalyzed polyurethane like they do requires a long time to harden up thoroughly, even though it seems dry and hard 15 minutes after it's shot. That's why they say 8 to 10 weeks. Part of that is scheduling, but a lot of it is letting the things cure.
Lacquer dries almost instantly and is sandable after about an hour, but it's not hard enough to polish for about 2 weeks under ideal conditions.
I'm not sure shellac or polymerized oils ever really cure up, at least not to the degree of hardness the lacquers and urethanes do.
Mess with any of them too early, and you're flirting with disaster.
