The .720 mod does not cause any geometry issues.
My 1990 Fender Strat has a 11/16" neck pocket depth from the factory, and that's with a pickguard. It's a nice fit.
Both of my Warmoth Strats were ordered with the standard 5/8" pocket depth, yet the one with ebony fretboard has a larger gap than the one with the maple fretboard (???). Both necks were ordered with same specs other than fretboard material.

Your measurement of 8.1mm looks pretty good to me. I normally level the neck pocket in the body by hand with a chisel, a small file, and sandpaper on a metal block. Then using a flat edge to verify. I took the same measurement on my recent hardtail build and got 8.7mm. The neck itself was not modified. I think Spud's looks lower because it has a pickguard.

With calipers my neck heel is . 93 “ I left the body pocket stock.
