Why no Quartersawn Roasted option.

I don't think it's not a matter of them not offering it, it's whether they have the material in stock. Reason I say that is I've seen it show up in the showcase and I think I even had one here once.
When something isn't consistently available, it won't show up in the "builder" section of the website, even if they actually have some stock. But, if you call, sometimes they can accommodate.
Another thing to consider is the reason some folks like quartersawn lumber for necks is its improved stability. But, with roasted Maple, you already have a highly stable piece of wood, so there's nothing to be gained. But, there's always the appearance thing. Sometimes quartersawn can be more attractive, although if you ask me the enhancement is subtle to the point where the additional cost isn't really justified. But, that's just me.
