Second Guessing My Order - HSS Wiring

Mojotone recommends.022 and then 500k pots with resistors to the single coils to give them a 250k load. Guess I should be able to do that with one volume and one tone. Then maybe a super switch for more combinations and splitting.
Of course you can do it with 2 controls. The trick is to try some different values of fixed resistor to get the right balance.

Most Fenders use a high value cap, which is a .047. Gibsons typically use a .022. For about the last 20 years, we’ve been using .015 in our shop on any guitar with any pickup design and are always happy with the results.

From Lollar website.
There is no right and wrong. Do what you want.
Modern Fenders use .022 .

Speaking of complicated, if ya get one of these bad boys you can dial in exactly what size cap you want every time you build :)

Ha ha love it ! There’s no such thing as ‘too complicated’ for DIYers. That’s why I build guitars, restore vintage audio gear, mod motorcycles……. It’s the building, experimenting and exploring new things that keep it exciting. I honestly don’t NEED more guitars, I’m building them because I enjoy the process.

Any reason not to drill that third hole yourself if you're second-guessing ordering only two?
I did actually think if that, I would imagine there would be room in the route. Thanks to all the input here, I think I can do what I want with the 2. Maybe concentric pots as well. Never done an HSS before, so this will be some fun experimenting.

Indeed, as the cavity is going to be routed the same, regardless of how many control holes in the order. And there would've been the "placeholder" location for that third opening anyway. But, for the joy of building & learning, forcing yourself to stay within the constraints of two pots would be an interesting challenge.

On one of my builds, it was a dual humbucker (as my metal heart requires ;) ) but I did coil splitting with push-pull pots on both tone & volume along with the 3-position toggle switch. I didn't keep that guitar intact long enough to really dig deep into all of the options because my custom body design was a colossal mistake and it was just uncomfortable to play (but looked super metal on paper.....!). But I am going to be transferring the electronics to a baritone build I'm working on. So I agree with your assessment of fun experimenting & building!

Look forward to seeing that build. Yep, you never know what you might like till you just try tons of stuff. I keep that perspective for everything in my life…..
