Sanding back Orange Peel - how good is good enough?

Okay, when sanding back the clear coat, how 'perfect' do you need it to be, so that nothing is obvious when you finally get down to the compound and polish? Sanding with 1200, got the vast majority of the peaks knocked down, but there are a few small dots of 'gloss' here and there. Should I go after all of those? Or just move on to the 1500 grit and continue?
 
You don't have to sand it all back. You can scuff to give it some tooth, and keep shooting clear and sanding again. Eventually, you'll have enough build to sand and buff it flat, shiny, and beautiful.
 
The surface needs to be completely dull. Those little dots of gloss will show up as small dings in the surface when you polish it up.
