non-gloss finish for walnut

Doing all my homework in hopes of building an all walnut VIP later this year. I want to have a non-glossy finish, and depending on how dark the wood is I may want something to make it a little darker. I've been trying to read around, but I'm not really sure what kind of finishes work for which woods.
1) if i wanted to make it darker would I have to use a stain or a dye or is that N/A?
2) what kind of matte finishes could i use? I didn't know about oil (if it's shiny or reflective at all) or if something else would be better.

I kinda just want the guitar to look plain.

Don't know if you caught this already, but it might be helpful to you. I'll attach a couple pics of the pre-stain body. Minwax dark walnut stain, three coats, followed by some tung oil.

look for Connor's Walnut soloist... I think it has a true oil finish over walnut..

This is "Krank N Stein", walnut with maple stringers. Done in Danish oil...

the finish. i'm not a fan of the body shape. but really nice work.
from the look of it, the white balance in the first photo looks pretty warm and the 2nd looks just the opposite. Did the finished wood come out looking as chocolatey brown as it does in that photo? i would love it to be that dark.

and is danish oil applied pretty much the same way as tung oil? i've never done any finishing, but tung oil sounded ridiculously simple and i was planning on doing both body and neck entirely that way.

The white balance is set exactly the same in each photo, but the lighting is different between the 2 rooms. Yes it is as chocolaty as it looks, it's actually a bit darker than the pic...
