keeping the grain

Hey everyone, I really like the look of open pored grain. My next build im planning on getting mahogany, which is of course an open pore wood, my question is how do I keep that open grain look? I realize it could be as simple as, dont clear to much or something, but these are some examples of what im going for.

I would probably:
raise the grain (wet it a bit and sand back with 220)
Get it really clean - don't touch it.
give it an oil stain of some type
satin wipe on poly from minwax.
Super easy.
 
I really like the finish on that ibanez.  Would you obtain the same/similar results by tung oiling a body without grain filler?

Yes, except it won't be black.  If you want it black, stain it before oiling or just paint it.
 
If I oiled the body for that look and then ended up deciding I prefer it the other way, can I just add grain filler from that point and then apply more coats of tung or what?

I am doing a spray poly...satin on a build...have 6 coats on now.  looks great.  Do you feel this is enough poly for the guitar?  Is it thick enough to protect?  I used one can for both the neck and body.
