how many pieces of wood

I have a vintage-modern one piece maple tele neck, which is one piece. Also have a total vintage strat neck, which is two pieces: maple back, rosewood board. Anything with an angled headstock is gonna have mo' pieces.
 
The LP 24 3/4" conversion neck on my LPS is a three-piece: two-piece mahogany neck (angled headstock) with rosewood fingerboard.
 
The short answer is 'It depends."  Type of construction and your choice of wood will determine the number of pieces used.
 
VM "one-piece": back/fretboard + skunk stripe = 2
Pro, straight head: back + fretboard = 2
Pro, angled head: back + fretboard + headstock = 3
 
I have 4 necks

2 birdseye straight head, both one piece back + fretboard = 2 pieces
1 birdseye angled head, one piece back + scarf joint + fretboard = 3 pieces
1 mahogany angled head, 3 piece back + scarf joint + fretboard = 4 pieces
