The first place I looked was ol' Seymour's site--he has a page devoted to nearly every wiring diargam you can think up. I think the only diagram he doesn't have is if you wanted to do a Brian May wire-up. Anyway, find the configuration you want, and that should give you a decent idea on what you'll need.
Wiring-wise, my little brother is helping me with my budget Squier project, and he is using something very similar to speaker wire--its stranded and comes in the gauge he's comfortable with working with. Just make sure that you get a color-coded set.
Two 500k pots, a .047 capacitor, a 5-way switch, a jack and jackplate, and the Warmoth wiring kit. All available from Warmoth or others. You can add a third pot or additional switches if the mood strikes you.
