I found it interesting that I couldn't really notice much of a difference in any of the videos without the direct A/B comparisons.
Overall I slightly prefer the single coil without the baseplate, and an open humbucker.
 
Full disclosure I'm a serious BK fanboy but I couldn't hear much difference in the covered vs non covered hums, or the base plate vs no base plate on the singles (the two things I was interested in hearing). I've got pretty good speakers on my computer. I dunno maybe if I connected my computer to my stereo I would hear more of a difference. On the guitar I built for my friend we put BK Mother's Milk pickups with a base plate on the bridge but I don't have a 'normal' Mothers Milk to compare it to.
 
I find that covered vs uncovered to be very hard to tell the difference. That is as long as they are good nickle/silver covers. A brass cover will kill the tone.

On base plates it does change the "feel" of the pickup to me. It does change the magnetic flow through the coil so the attack is slightly altered. It does add metal mass to the pickups' circuit and does increase the inductance which darkens the tone a bit. It really depends on what alloy the metal is. The base plate is designed to reduce the "icepick" effect of the bridge pickup. To me adding mass is a less desirable way to accomplish this. There are ways to wind it to fix that issue.
 
I try... I really try... I mean, I use good headphones, a good soundcard, mark the places in the videos where I can cut back and forth and A/B stuff. But without knowing the amp, without turning the knobs myself, it's all just some guys going brang-brang-brang on all these damn things. Are there really amps out there with such poor tone controls and lack of volume that any of this will help you play music? Get a better amp.... learn a song a day for a month...

Hehe! Yeah. I can't tell you how many times my brothers and friends and I have put something up for sale only to have some guy show up and school us on what great gear it is after all. Guy starts throwing out Alex Lifeson, SRV and Gary Moore riffs like they're penny candy and it's like "Dammit! Why did I agree to sell this thing? This is the amp of doom! I wanna buy it! Wait... "
