I know how to do this, this is more of a question of "what worked for you, how did you like it".

Right now my guitar is wired up with a ganged volume pot for MIDI volume, and the 2nd tone spot holds a blend control for the acoustiphonic preamp.  The acoustiphonic is going away, as have the piezos, and I'm going to adapt the GK3 pickup to the Hexpander board.  I'm currenty thinking about splitting the volume - putting guitar volume on the traditional spot where God told Leo to put the volume knob, and MIDI volume on the 2nd tone spot.  Rounding out will be a momentary on-off-on toggle for S1/S2, and maybe a MIX 3 way toggle. I might not need the mix though if I have two separate volume knobs (though it could conceivable still be handy).

The biggest reason I could think of having two volumes instead of using the mix control would be if I could remap the volume to a different control. My Yamaha doesn't appear to let me do it, but I think I can redo it in software. Of course in software, having a knob on the guitar to do it becomes less useful, so there's that...

Opinion and especially experience? Guitar controls are very much the province of Jurassic Park. Just because it's possible doesn't necessarily mean it's an idea on par with curing world hunger.
