A few personal and subjective observations:
There's a reason that the stop tail piece behind a TOM bridge has adjustable height. It is to adjust the feeling of stiffness of the strings.
On the same guitar, with the same strings ( brand and gauge ) and of course tuned to the same pitch, the feeling of "stiffness" could be changed by
removing the stop tail piece behind the TOM and installing a trapeze tail piece.
A difference in perceived stiffness of a string ( stiffness ... not tension ) can be changed by adding or removing a string tree ... or even adjusting the height of a string tree.
