If it's not guitars (or watches) my money seems to go towards keeping this hobby alive. Where does your guitar/music-related funding split its time?

For me it's food, rent, utilities, child support, and medical care.  I can barely afford my hobby right now.  I'd prefer not to sell of any work-in-progress, although I might have to.  But I'll make you a great deal on a healthy four-year-old miniature barbarian (boy child), lightly used.
 
Music is the only spare time thing for me.  Everything else takes up the other 100% of my time.

Tell me about it, Nikon glass is so damn expensive. I've been pretty happy with my D3 and lenses that I've not bought anything in a good while (I keep looking for a decent deal on a 200mm f/4 Micro-Nikkor or 135 f/3 DC). It's tough to not upgrade, but it's hard to go up from the kit I'm using without dropping serious cash and that keeps me at bay - until I find a decent digital MF setup.  :doh:
 
Specialized Road Bike. I have had my current bike for 2 years and am already lusting after a new one.

Heh heh. When I was into it it was Leica all the way: coupla Ms, all kindsa glass, with an old SL and even a screw mount thrown in for good measure. There was a period of nearly 10 years where I never left the house w/out at least one camera, processed my own b&w film and printed at a lab at my work. Got reams of negs, tons of prints, and yes, still a couple of cameras that see pitifully little use. Sold off a bunch of stuff coupla years ago. Haven't missed it. Will likely sell of the rest (or at least most of it). It'd finance a pretty darn nice rig!
 
I hope that's how I feel about my Nikon setup when I move up to a digital Hassy or Mamiya/PhaseOne system. For the cost of a new D5, I could easily by shooting a Hassy H3D31 or better. Sure the lens choices are more limited on DMF, but it beats trying to stitch 4x5.
 
I'd also say my photo gear, but having spent many years of my life as a professional photographer (and still doing some paid work when I feel like it) I don't think it counts as a hobby. So for me I guess it would be watches and knives. But my guitars get most of my discretionary spending money.

I feel ya brotha. I picked up this custom built cross bike used and it has served me well but I just bent the forks and she is getting old. I got a couple bikes on my list right now. Just gotta finish school. 2 months to go.
