Temporary Shellac Finish

Hello:
  This is a first time post.

  I have an unfinished Alder Strat body and a 1 piece Maple neck.
My goal of putting together a kit guitar is to enjoy the process and experiment with the results. Such as trying different pickups and wiring configurations, or getting a different style/wood neck or body further on down the road.
I am not certain on how I want the final finish on the woods.
The idea that seems most practical at the moment is to use unwaxed Shellac. I have heard that it is a fragile finish, but easily removed if required. This seems like it could be a decent interim measure. Are there any other finishes that are more durable that could be applied over an unwaxed Shellac coat, which would also be reasonable to remove?

Any suggestion or comments would be appreciated.

Shellac is indeed easy to apply and fragile.  But it is often used as a sealer under other coatings such as lacquer.  If you live somewhere where nitrocellulose lacquer is available in spray cans, that is easy to remove.  But it also requires some care in the application.
