why on the magority of the necks in the showcase i can onlty choose 2 fret sizes 6100 and ss 6115?

I presume you're referring to Scalloped necks, as opposed to non-scalloped necks.

Scalloped necks indicate that they require the tallest fret wire available, so less wood needs to be removed.
