Should you tape the pickup/control cavities before using spray cans?

Obviously it’s 100% necessary to tape the neck pocket, but what about the pickup and control cavities? Based on YouTube videos it seems a lot of people don’t bother.

Not necessary. Some people do mask the cavities for a "cleaner" look in the cavities, but it's up to you.
