prs wide-fat = Warmoth 59 exactly. Sounds like you want a standard thin. If prs wide fat is too big, fat or boat will not work for you. Wolfgang may, may be the right one.
Satin finishes are the easy ones. Easy = wipe on satin poly. Little more advanced = satin or semigloss nitro from deft spray can.

It's not too big at all. I actually love both of 'em, so in-between's the target.

For tuners, look at the Planet Waves locking tuners, I have them on all my guitars, and you can find them cheap on ebay.
The chambered body will not only tolerate  a chambered body, but will thrive on them.  My tele is a chambered body.
As to the neck, I love the big fat wide necks. 1 and 3/4 is great, with the boat style.  It is a matter of personal taste.  My hands have gotten stretched out over the years and I find the skinny necks, especially the 1 5/8's, impossible.
