On/Split/Off - nothing else?

Like the subject line says - it is possible to have a single humbucker wired to a three way switch to go from both coils to split to off?  Or would I need a separate switch to mute it?
 
This should be doable with an on/on/on switch. Here is a schematic that should work. The switching sequence will be On-Split-Off. You could also use an on/off/on switch, but then the sequence would have to be On-Off-Split, which seems less intuitive to me.

Would this be a regular 3 way, like a LP switch?  I guess I can snag a few switches at the 'Shack to see which matches the schematic best.

No, this is not for a LP-style switch, but that should be possible as well if that's what you want. This is an on-on-on toggle like the ones shown at the top of the page here:

They're quite a bit smaller than a LP-style switch.
 
I think a LP toggle would work if you connected the pickup's hot wire to the switch common, connected one side of the switch to the pickup's splitting wires, and connected the other side of the switch to the ouput. It's a little strange, but it should work.
 
Some LP switches aren't exactly SPDT. They can be two separate ON/OFF switches. Two of the contacts are usually connected together to make a common pole, but they don't have to be.
