Newbie Question -- Should you burnish cross-grain a maple neck?

I just got two lovely roasted maple necks today - one all maple and one rosewood.  I've usually tru-oiled my necks, but want to try burnishing these.  So a newbie question: when burnishing the maple fret-board with grits 400-2,000, is it OK to sand across the grain?  My grandfather the woodworking carpenter would have a cow, but how else can you do a uniform job with the frets in the way?  I appreciate everyone's help.

If I do a 2nd build, I'm thinking I will order the neck from Warmoth without frets to burnish the fretboard along with the rest of the neck, then have it fretted locally after.

You never sand across grain, no matter how fine. To burnish fretboards, you order the neck without frets, burnish the 'board, then install the frets.
