Is grain filler necessary on Mahogany?

So I planning out a build and have pretty much decided on a Mahogany body and I want a natural or oiled look thats pretty cheap and easy. Anyways I read a few posts on here about something called Bartleys wipe on gel varnish. I guess you just wipe it on then wipe off the excess then let dry, no sanding or anything like that, then repeat. But Ive also read that Mahogany needs to be grain filled. I kind of like the open grain look and dont want to really deal with grain filling. Do you guys think that I could get away with no grain filler and just the Gel Varnish?

Haven't ever used a gel finish, but you really don't have to fill it if you don't want to. Grain filler is mainly for getting a smooth surface...
 
Thanks for the info, most of the do it yourself finishes intimidate me but this one seems really simple. I just hope it gives adequate protection, I'm not too concerned about looks .
