Bought a 4.5 pound corned beef on Sunday.... Rubbed it with mustard and my magic spices the night before, and let it sit all day. Tossed it in the smoker last night for a couple hours. It's tender as can be, and tastes like spicy pastrami. I'll never cook a corned beef in the crockpot again.

I love corned beef, but was never really satisfied at home until I got a pressure cooker. Smoking it sounds better, but it seems like it should take more than a couple hours. I've never had a smoker, but I was under the impression they were a fairly low temperature operation?
 
I have a stovetop smoker that functions more like a Dutch oven, really holds the heat and cooks fast and deep. Also, corned beef has already been brined - so it's basically edible even without cooking. Once I thaw the portions and nuke it for 2 minutes when served it will be some fine eating - no doubt.
 
Looks good. I don't have a smoker but may need to go for one some time. My nephew has one and is always smoking things. That's a good way to go.
 
I used to smoke things. But, then I grew up and got a job where I needed to keep my wits about me and, well, I just couldn't do it anymore. I've run across a couple/few of the guys who also liked to smoke things back in the day, but I gave them fake phone numbers so we could get together again real soon  :laughing7:

This made me do a little looking around, I like what i see, think I'm gonna have to get me one of those! Fine look'n Corned Beef, AC! Thanks for posting that.

Here's what I bought a couple years ago. I've bought a number of boxes of chips already, 8 to a pack. I've smoked chicken, beef, pork, veggies, fruits, peanuts, almonds, sea salt, etc. The cheeses were not a success. The neat thing is - barely any smoke escapes during cooking. Won't even set off the 2 smoke alarms in the kitchen (but boiling water for eggs will.... go figure).
 
That Nordic Ware smoker is attractive.  I have a different unit - Camerons - and while it does a nice job flavor-wise, it leaks a lot of smoke.  I use it on a gas burner outside so it doesn't set off alarms and make the whole place smell like we had a four-alarm fire .Also, it's a lot shallower than that kettle unit.  I'd like to be able to smoke a whole chicken.  Does a great job on salmon, though.
