Not a whole lot, just a few frets, but it's there. I noticed washing my hands with olive oil completely cleans them of Tru-Oil. So do I just scrub a bit with olive or lemon oil? Or some other product/method? Or am I SOL? The wood is pau ferro FWIW.

Try orange oil on the fret board.  The orange itself would not hurt the fret board and may take off some of the tru oil.  It will also even out the color.  I suspect if it was just a little tru oil it really did not build up a sheen.
