I've never been able to figure out what order the wood lists for necks, fretboards and bodies are in, but Ebony, Black Ebony and Macassar Ebony are all available. They're just at the bottom of the list after Ziricote, which you would expect to be last. Also, sometimes depending on the neck there are more species available than with other necks, so the list gets to be longer than can be displayed. That causes a ladder bar to appear next to it so you can scroll the list. Since Ebony is listed last, sometimes it doesn't show up unless you scroll down.
