Another possibility, if you can't find a species you want, would be to buy veneer of the desired species and glue it to a plastic or wood cover.

This idea might be an improvement on using raw wood.

I have read of wood pickguards & cavity covers shrinking as they dry out, and also of warping.

If you want to, you could also check out Laminex supplies (you know, the stuff they use for kitchen tops?), I'm sure they'd have a mahogany or rosewood laminate to stick onto a solid backing.
