Anyone know of a concentric pot with a switch on the ring instead of a 2nd pot?

Yes, that's what I'm hoping for. Not sure if they exist or not.

They certainly exist, but their usage tends to be rather specialized. You will often find them on analog oscilloscopes, for example. A problem is that they are often rather deep, and would not fit in a control cavity on a guitar.

1P2T, On-Off-On.  It's for the MIDI-MIX-Guitar switch for my Hexpander.  I had the idea to put it on the ring for the MIDI volume knob.  I should probably just do:

Guitar Volume on 250k audio
S1/S2 on a Mom-Off-Mom toggle
MIX on a On-Off-On toggle
MIDI Volume on a 250k linear

It might as you say be more usable as a dedicated switch. It's a lot of years since I was using an early guitar synth in a band live, but from what I can recall having a switch on a concentric pot would have been a bit fiddly.
