Mmm... chili steak tartare. :evil4:
1/2 Lb. Ground tenderloin (ground sirloin can be substituted to reduce cost, but it won't be as good)
1 full teaspoon ground cumin
1 full teaspoon chili powder
salt
pepper
juice of 1/3 lime
Combine ground tenderloin, cumin and chili powder in bowl and mix thoroughly .
Taste result, as cumin/chili powder vary, you will need to add a little more to taste and test small bites to get the mixture "right" and tasting like chili, but not TOO strongly. The counter-intuitive thing here is that you need to use more of these spices in the tartare than if you cooked the meat.
Salt and pepper to taste.
Add lime juice just before forming/serving, if you do it in advance the acidity will discolor the meat gray.
Absolut Citron thyme mayonnaise
Put 1 egg and 1 clove garlic in blender, mix thoroughly.
SLOWLY drizzle 1/2 cup good extra virgin olive into blender while on high speed until it starts to emulsify
Add 1 tablespoon Absolut Citron (you can substitute another lemon flavored vodka if desired)
Slowly add another 1/2 cup good extra virgin olive into blender while on high speed
Add 1 tablespoon salt, 1/2 tablespoon white pepper and 1 tablespoon fresh thyme leaves, pulse in blender till well mixed
Spoon/drizzle mayonnaise on top of tartare, garnish with capers
