I would definitely try to get a scrap/small piece of roasted flame maple to test on before getting dye/stain anywhere near that lovely neck.
I don't have personal experience with it but I've heard that roasted maple doesn't take dye/stain the best
You could also use Birchwood Casey "Stock Sheen" which is their product designed to de-gloss Tru oil. Its a cream with some fine grit in it that you buff the finish with.
I don't have a recommendation for specific products, but you will definitely want to use filler and likely multiple applications as wenge can have some pretty deep slots in the grain.
