I know Spalted Maple can only go on guitars with binding, but is it also restricted to flat top guitars only? The carved tops have much fewer lam top pieces to choose from.

This has been asked before on a couple of occasions; while there have been a couple of carved top Spalted Maple bodies on the Showcase in the past, pieces of Spalted Maple that are both thick enough and solid enough to CNC a carved top are pretty rare, and will bring a steep price.
As far as the laminate tops go, there will always be more tops available in 1/8" lams than in 1/4" lams for hollow bodies and fewer still 5/8-3/4" for carved tops. This is in large part due to declining availability/increasing prices for exotic woods and the reason Warmoth developed the DL Quilt tops.
