There is absolutely no reason to get a pickup reverse wound if you have a phase switch on your guitar, right?

That's half of it.  What about the reverse polarity of the magnet?  Unless it's an electromagnet, I've never seen a switch do that.

But yes, switching the direction the signal goes around the coils is the same as switching the direction of the winding.
