Question about NON roasted maple/maple necks

Thinking of replacing the neck on my MIM Strat. I built a tele style earlier this year with the 1 5/8 width neck and love it so much that it ruined the stock neck width for me.

My tele has roasted maple neck that I did the burnishing technique on. Came out great, love it. For the Strat I'm eyeing a unfinished Birdseye maple neck (non roasted). My idea is to try to give it a subtle vintage tint stain and then finish with Tru Oil. I've never attempted either of these processes before. Is it exceptionally difficult? Does the maple fingerboard need the same treatment as the neck? Is it OK to do this after frets are installed?

Thanks!

Last neck I did  two weeks ago...  spent two days on head stock front gloss.  And one afternoon satin on the rest.  It's already getting shiny when I play it, looks very cool.  Minwax laquer.  Lowe's!

I finished the maple/maple neck on my yellow Strat with a satin urethane clear on the fretboard only (had to mask each fret with really narrow automotive tape), and about 12 coats of Tru Oil on the back. Did the face of the headstock in a gloss urethane clear. The back of the neck feels awesome, like unfinished wood. More time consuming process, but the end result is totally worth it, and better than anything you'll get on a production line guitar.

I've never stained a neck (though I will be on my current project).  I can tell you that applying true oil on both the fret board and the neck is real easy and it comes out great.
