I was browsing the SD wiring diagrams site, and I was just wondering:

I like dual humbucker guitars, but I really don't like the middle switch position (both pickups).  It MUST be possible to do a dual hum guitar with a toggle switch rather than the traditional 3-way switch.  Does anybody have a diagram for that?  Or is it just a matter of omitting some wires from an existing diagram?
 
Yes, it's very easy, you can do it with literally any switch with 2 positions.  I can't give you a diagram unless you tell me what kind of switch you're using.
 
I think you're looking for a DPDT.  If so it cake, just replace the 3 way in any diagram with one of those

Top lugs for 1 pickup, center lugs for the output, bottom lug for the other pickup.
 
Yep, a DPDT (like most toggle switches sold for guitars) will work.  Pick one side (left 3 or right 3 lugs) and solder as blue said.
 
One more thing, I forgot to ask...

For a dual humbucker guitar with a single on/on switch to select one or the other pickup - would two-conductor wired pickups be sufficient to achieve this?
 
Of course!  :guitaristgif:  You don't need 4-conductor unless you're doing coil taps, series/parallel, phase, or other shenanigans.  For plain ol' pickup selection you only need 2.
