Sure you can, see my "54 Tele Goldtop" version below.

You will need to custom order the body and there are upcharges to get the Les Paul control routing on a Fender style body...

And just making sure, putting binding on it will make the top edge of the body square right?

I can't find a carved top jazzmaster on the site or any options to get one, but they might do one custom for you. I'd expect it to be expensive. As for binding, they do the natural masked binding thing on rounded edge guitars, as opposed to using actual binding material. I can't find a Jazzmaster finished that way today, but here's a Strat...

Yeah I really want binding so the edge is square and not rounded, like on that gold top Jazzmaster.

I could be wrong but I don't think they'll do a carved top JM.  A tele would look awesome though
